This Pacific Northwest-inspired salmon quinoa salad is one of my favorite healthy lunches. Flaky salmon is served over mixed greens with quinoa, blueberries, toasted pecans, pickled red onions, and a simple lemon Dijon dressing. It's packed with protein, healthy fats, and fresh seasonal flavor, making it an easy meal for lunch or a light summer dinner.
